1/2 cup almond flour

1 1/4 cups all-purpose flour

1/4 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1/4 cup ice water

1 tablespoon sugar (for sprinkling)

For the Pear Filling:

3-4 medium ripe pears, peeled, cored, and thinly sliced

1 tablespoon lemon juice

1/4 cup brown sugar (adjust based on sweetness of pears)

1 teaspoon ground cinnamon

1 tablespoon cornstarch

For Assembly:

1 egg (for egg wash)

Extra almond slices (for garnish)

Prepare the Almond Cream:

        Make the Galette Dough:

            - Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

              - Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together.

                - Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
