Sausage Potato Egg Breakfast Skillet

Ingredients
  

4 breakfast sausages (links or crumbled)

2 large russet potatoes, diced into small cubes

1 small onion, finely chopped

1 red bell pepper, diced

1 cup fresh spinach, roughly chopped

4 large eggs

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Optional: shredded cheese (cheddar or mozzarella)

Instructions
 

Prep the Vegetables: Wash and dice the potatoes, onion, and bell pepper. Roughly chop the spinach and set aside.

    Cook the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt, pepper, garlic powder, and paprika. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are golden and cooked through.

      Add Sausage & Veggies: Push the cooked potatoes to the side of the skillet. In the open space, add the remaining tablespoon of olive oil, then add the breakfast sausages. If using links, slice them into rounds; if crumbled, just add directly. Cook for 5-7 minutes until browned. Add the chopped onion and red bell pepper to the skillet, mixing everything together. Sauté until the onion is translucent and the bell pepper is tender.

        Incorporate the Spinach: Stir in the chopped spinach and cook for an additional 1-2 minutes until wilted. Ensure everything is well combined.

          Cook the Eggs: Create 4 small wells in the mixture and crack an egg into each well. If desired, sprinkle with a bit of salt and pepper. Cover the skillet with a lid and cook for 5-6 minutes or until the egg whites are set and the yolks are still runny, or cook longer if you prefer firmer yolks.

            Serve: Once the eggs are cooked to your liking, remove the skillet from heat. Top with fresh parsley and cheese if using. Serve hot and enjoy your delicious breakfast skillet!
