2 medium russet potatoes, diced into small cubes

1 red bell pepper, chopped

1 green bell pepper, chopped

1 medium onion, finely chopped

1 cup cooked and crumbled breakfast sausage (or plant-based sausage)

2 cloves garlic, minced

4 large eggs

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Hot sauce (optional, for serving)

Prep the Potatoes: Start by rinsing the diced potatoes under cold water to remove excess starch. This will help them crisp up better. Pat dry with a clean kitchen towel.

    Cook the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the potatoes and sprinkle with salt, pepper, and smoked paprika. Cook for about 10-15 minutes, stirring occasionally until the potatoes are golden brown and tender.

      Sauté the Vegetables: Push the potatoes to one side of the skillet. In the empty space, add the remaining tablespoon of olive oil and sauté the onion, red bell pepper, and green bell pepper. Cook for about 5 minutes, or until the vegetables are softened. Add the minced garlic and dried thyme, cooking for an additional minute.

        Combine Ingredients: Stir the breakfast sausage into the skillet with the veggies and potatoes, mixing everything thoroughly. Allow everything to cook together for 2-3 minutes to blend the flavors.

          Add Eggs: Create four small wells in the hash mixture and crack an egg into each well. Cover the skillet with a lid and allow the eggs to cook to your desired doneness — about 5-6 minutes for runny yolks or longer for firmer yolks.
