1 cup shredded sharp cheddar cheese

1/2 cup milk (dairy or non-dairy)

1 tablespoon nutritional yeast (optional, for added flavor)

2 green onions, sliced, for garnish

Cook Quinoa: In a medium-sized saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa has absorbed all the liquid and is fluffy. Remove from heat and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Broccoli: Toss in the broccoli florets and sauté for 5-7 minutes, or until they are tender but still vibrant green. Sprinkle in the smoked paprika, black pepper, and salt to taste, mixing well to combine.

        Combine Mixture: Add the cooked quinoa to the skillet with the broccoli and onion. Stir to combine all the ingredients evenly.
