1 lb (450g) breakfast sausage, casings removed

2 medium russet potatoes, diced

1 bell pepper (any color), diced

1 small onion, diced

2 cloves garlic, minced

1 tsp paprika

½ tsp black pepper

½ tsp salt (adjust to taste)

2 tbsp olive oil or bacon grease

4 large eggs (optional, for serving)

Fresh parsley, chopped (for garnish)

Prep the Ingredients: Start by washing and dicing the potatoes, bell pepper, and onion. Mince the garlic and set aside.

    Cook the Potatoes: In a large skillet, add 1 tablespoon of olive oil over medium heat. Once hot, add the diced potatoes and season with salt and paprika. Cook for about 8-10 minutes, stirring occasionally until they start to soften and turn golden brown.

      Brown the Sausage: Push the potatoes to one side of the skillet and add another tablespoon of olive oil to the empty side. Add the breakfast sausage, breaking it apart with a wooden spoon. Cook for about 5-7 minutes until browned and cooked through.
