2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

4 cups ripe tomatoes, chopped (you can use canned whole tomatoes if fresh aren't available)

2 cups vegetable broth

1 teaspoon sugar

1 teaspoon dried oregano

Salt and black pepper to taste

1 cup fresh basil leaves, chopped (plus extra for garnish)

1/2 cup heavy cream (optional)

Croutons for topping (store-bought or homemade)

For Homemade Croutons:

4 slices of rustic bread, cubed

2 tablespoons olive oil

1/2 teaspoon garlic powder

1/2 teaspoon dried Italian herbs

Prepare the Croutons:

    - Preheat the oven to 400°F (200°C).

      - In a bowl, combine the cubed bread with olive oil, garlic powder, Italian herbs, and salt. Toss until the bread is evenly coated.

        - Spread the bread in a single layer on a baking sheet. Bake for 10-15 minutes or until golden and crispy, tossing halfway through for even browning. Set aside.

          Make the Soup Base:

            - In a large soup pot, heat olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

              - Stir in the minced garlic and cook for another minute until fragrant.

                Add Tomatoes and Seasoning:

                  - Pour in the chopped tomatoes (along with their juices if using canned), vegetable broth, sugar, dried oregano, salt, and black pepper.

                    - Bring the mixture to a boil, then reduce the heat to a simmer. Let simmer uncovered for 20-25 minutes, allowing the flavors to meld.

                      Blend the Soup:
