1 lb ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

1 tbsp olive oil

1 medium onion, diced

2 medium carrots, sliced

2 celery stalks, diced

2 cups diced tomatoes (canned or fresh)

4 cups chicken broth

1 cup green beans, trimmed and chopped

1 cup fresh spinach or kale

Fresh parsley for garnish

Instructions
 

Make the Meatballs: In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

    Form Meatballs: Roll the mixture into small meatballs, about 1 inch in diameter (you should get around 20-24 meatballs).

      Sear Meatballs: Heat olive oil in a large pot over medium heat. Add the meatballs in batches, searing them on all sides until golden brown. Remove from the pot and set aside.

        Sauté Vegetables: In the same pot, add diced onion, carrots, and celery. Sauté for about 5-7 minutes or until the vegetables are softened.

          Add Tomatoes and Broth: Stir in the diced tomatoes and chicken broth. Bring to a gentle boil.

            Simmer Meatballs: Carefully add the seared meatballs back into the pot. Reduce heat to low and let it simmer for about 20 minutes, allowing the flavors to meld.

              Add Green Beans and Greens: In the last 5 minutes of cooking, add chopped green beans and spinach or kale. Stir until the greens are wilted and the green beans are tender.
