Sheet Pan Chicken with Potatoes

4 bone-in, skin-on chicken thighs

1.5 lbs baby potatoes, halved

1 red onion, quartered

4 cloves garlic, minced

2 tbsp olive oil

1 tsp dried oregano

1 tsp dried thyme

1 tsp smoked paprika

1 lemon, zested and juiced (about 2 tablespoons juice)

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped, for garnish

Optional: red pepper flakes for a kick

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prep the Chicken: In a large bowl, combine the olive oil, minced garlic, oregano, thyme, smoked paprika, lemon zest, lemon juice, salt, and pepper. Mix well, then add the chicken thighs and coat them evenly in the marinade. Let them marinate for about 15 minutes while you prep the vegetables.

      Prep the Vegetables: In another bowl, toss the halved baby potatoes and quartered red onion with a drizzle of olive oil, salt, and pepper. Make sure they are coated evenly.

        Arrange on Sheet Pan: On a large baking sheet, place the marinated chicken thighs in the center. Scatter the potatoes and onions around the chicken. If you like a little heat, sprinkle some red pepper flakes over the potatoes.

          Roast in the Oven: Place the sheet pan in the preheated oven and roast for 30-35 minutes, or until the chicken skin is crispy and golden brown and the internal temperature of the chicken reaches 165°F (75°C). The potatoes should be fork-tender and slightly crispy.
