1 pound of Italian sausage (sweet or spicy, your choice)

1.5 pounds baby potatoes, halved or quartered depending on size

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

1 medium red onion, diced

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Lemon wedges, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper for easy cleanup.

    Prepare the Sausages: If using whole sausages, slice them into thick chunks; if using sausage links, leave them whole.

      Prepare Vegetables: In a large bowl, combine the halved baby potatoes, sliced bell peppers, diced red onion, and minced garlic.
