Shrimp Lettuce Wraps with Lime Glaze

Ingredients
  

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, thinly sliced

1 cup shredded carrots

4 green onions, chopped

1 tablespoon soy sauce

2 tablespoons honey

2 tablespoons fresh lime juice (about 1 lime)

1 teaspoon lime zest

1 head of Butter or Romaine lettuce, leaves separated and washed

Salt and pepper to taste

Optional toppings: crushed peanuts, cilantro, and lime wedges

Prepare the Shrimp: In a bowl, combine the shrimp, olive oil, garlic, ginger, salt, and pepper. Toss to coat well and let it marinate for 15 minutes.

    Make the Lime Glaze: In a small saucepan over medium heat, combine the soy sauce, honey, lime juice, and lime zest. Stir well and bring to a simmer. Cook for about 3-4 minutes until slightly thickened. Remove from heat and set aside.

      Cook the Vegetables: In a large skillet over medium heat, add the marinated shrimp and cook for about 2-3 minutes per side until they turn pink and opaque. Add the sliced bell pepper, carrots, and chopped green onions, stirring well to combine. Cook for an additional 2-3 minutes until the vegetables are tender-crisp.

        Combine and Serve: Drizzle the lime glaze over the shrimp and vegetable mixture, tossing to combine. Remove from heat.

          Assemble the Wraps: Take a lettuce leaf and spoon a generous amount of the shrimp mixture into the center. Top with optional crushed peanuts and fresh cilantro, if desired. Squeeze a little lime juice on top for extra zing.
