Ingredients

For the Shrimp Skewers:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lime

For the Peach Salsa:

2 ripe peaches, diced

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, seeds removed and finely diced (adjust for heat preference)

Juice of 1 lime

Salt to taste

Instructions

Marinate the Shrimp: In a mixing bowl, whisk together olive oil, minced garlic, smoked paprika, cumin, salt, black pepper, and lime juice. Add the shrimp and toss to coat evenly. Cover and let marinate in the refrigerator for at least 30 minutes.

Prepare the Peach Salsa: In a separate bowl, combine diced peaches, red onion, cilantro, jalapeño, and lime juice. Season with salt to taste. Mix well, cover, and set aside to allow flavors to meld.

Preheat Grill: Heat your grill to medium-high. If using wooden skewers, make sure to soak them in water for about 30 minutes prior to grilling to prevent burning.

Skewer the Shrimp: Thread marinated shrimp onto the skewers, about 4-5 shrimp per skewer.

Grill the Shrimp: Place the skewers on the grill. Cook for approximately 2-3 minutes per side, or until the shrimp are pink and opaque. Remove from grill and let rest for a minute.

Serve: Arrange the grilled shrimp skewers on a platter and top with generous spoonfuls of the peach salsa. Garnish with additional cilantro if desired and serve with lime wedges on the side. Enjoy!
