2 cloves garlic, minced

1 can (28 ounces) crushed tomatoes

2 cups vegetable broth (or chicken broth)

1 teaspoon sugar (to balance acidity)

Salt and pepper, to taste

1/2 cup heavy cream (or coconut cream for a vegan option)

1 handful fresh basil leaves, chopped

Optional: grated Parmesan cheese for serving

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until softened and translucent. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth. Stir well to combine. Add the teaspoon of sugar, and season with salt and pepper to taste.

      Simmer: Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for about 20 minutes, stirring occasionally. This allows the flavors to meld beautifully.

        Blend for Creaminess: After simmering, remove the pot from heat. Using an immersion blender, puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender, then return it to the pot.
