2 lbs boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite)

1/2 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1 teaspoon Worcestershire sauce

1 cup corn (fresh or frozen)

1 cup black beans, drained and rinsed

1 cup cooked brown rice or quinoa

1 cup shredded cheddar cheese (optional)

1 avocado, sliced (for topping)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken: Place the boneless, skinless chicken breasts at the bottom of the slow cooker.

    Mix the Sauce: In a medium bowl, mix the BBQ sauce, chicken broth, garlic powder, onion powder, smoked paprika, black pepper, salt, and Worcestershire sauce. Pour this mixture over the chicken in the slow cooker, ensuring that the chicken is well coated.

      Cook: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.

        Shred the Chicken: Once cooked, carefully remove the chicken from the slow cooker and place it on a large plate. Use two forks to shred the chicken into bite-sized pieces.

          Combine with Sauce: Return the shredded chicken to the slow cooker and mix it with the remaining sauce, stirring until well combined.

            Prepare the Grain Base: While the chicken finishes cooking, prepare the brown rice or quinoa according to package instructions.
