Slow Cooker Creamy Beef Stroganoff

2 lbs beef chuck roast, cut into 1-inch cubes

1 medium onion, diced

3 cloves garlic, minced

8 oz mushrooms, sliced (button or cremini)

1 cup beef broth

1 cup sour cream

2 tbsp Worcestershire sauce

1 tbsp Dijon mustard

1 tsp paprika

Salt and pepper to taste

3 tbsp olive oil

1 tbsp cornstarch (optional, for thickening)

Fresh parsley, chopped (for garnish)

12 oz egg noodles or your pasta of choice

Sauté the Beef: In a large skillet over medium-high heat, heat the olive oil. Season the beef cubes with salt and pepper. Sear the beef in batches, browning on all sides (about 5-7 minutes). Transfer the browned beef to the slow cooker.

    Sauté Onions and Mushrooms: In the same skillet, add the diced onion and mushrooms. Sauté until softened (about 5 minutes). Add the minced garlic and sauté for an additional minute until fragrant. Transfer this mixture to the slow cooker.

      Add Liquid Ingredients: In a bowl, combine the beef broth, Worcestershire sauce, Dijon mustard, and paprika. Pour this mixture over the beef and vegetables in the slow cooker. Stir gently to combine.

        Slow Cook: Cover and cook on low for 7-8 hours or on high for 3-4 hours, until the beef is tender and easily shreds.

          Make it Creamy: About 30 minutes before serving, stir in the sour cream. If you prefer a thicker sauce, mix the cornstarch with 2 tbsp of water and add it to the slow cooker, stirring until well blended. Allow the sauce to thicken while cooking for the final half-hour.

            Cook the Noodles: Prepare the egg noodles according to package instructions in a separate pot. Drain and set aside.

              Serve: Once the stroganoff is done, taste and adjust seasoning as necessary. Serve the creamy beef stroganoff over the cooked egg noodles. Garnish with fresh chopped parsley.
