2 cups tortellini (fresh or frozen)

1 can (28 oz) crushed tomatoes

1 can (15 oz) diced tomatoes

1 medium onion, diced

4 cloves garlic, minced

2 cups vegetable broth

1 cup heavy cream

1 teaspoon dried basil (or 2 tablespoons fresh basil, chopped)

1 teaspoon sugar (to balance acidity)

Salt and pepper to taste

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Prepare the Slow Cooker: Start by greasing the inside of your slow cooker with a little olive oil or cooking spray to prevent sticking.

    Layer Ingredients: In the slow cooker, combine the crushed tomatoes, diced tomatoes (with juices), diced onion, minced garlic, vegetable broth, dried basil, and sugar. Stir well to mix all the ingredients.

      Add Tortellini: Carefully add your tortellini to the slow cooker, making sure the pasta is submerged in the liquid.

        Cook: Cover the slow cooker with its lid and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the tortellini is tender.

          Add Cream and Cheese: Once the cooking time is up, stir in the heavy cream and shredded mozzarella cheese. Allow the mixture to heat for an additional 15-30 minutes on low, until the cheese is melted and the soup is creamy.
