Slow Cooker Fruit Chili

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes, with juices

1 can (8 oz) tomato sauce

1 medium red bell pepper, diced

1 medium green bell pepper, diced

1 medium red onion, chopped

2 cloves garlic, minced

1 cup diced peaches (fresh or canned, drained)

1 cup diced pineapple (fresh or canned, drained)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for heat preference)

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Base: In a skillet over medium heat, warm the olive oil. Add the chopped onions and garlic. Sauté until the onions are translucent, about 3-4 minutes.

    Combine Ingredients: In your slow cooker, combine the sautéed onions and garlic with the black beans, kidney beans, diced tomatoes, tomato sauce, diced bell peppers, diced peaches, diced pineapple, chili powder, cumin, smoked paprika, and cayenne pepper. Stir well to combine all the ingredients.

      Season it Right: Season the chili with salt and pepper to taste. Mix again to ensure even seasoning throughout.
