Smashed Garlic Potatoes with Herbs

1.5 lbs baby Yukon gold potatoes

4 cloves garlic, peeled and smashed

1/4 cup extra virgin olive oil

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 teaspoon sea salt (or to taste)

1/2 teaspoon black pepper

Zest of 1 lemon

2 tablespoons fresh parsley, chopped (for garnish)

Optional: Shaved Parmesan cheese for serving

Instructions
 

Boil the Potatoes: In a large pot, bring salted water to a boil. Add the baby Yukon gold potatoes and smashed garlic cloves. Cook until the potatoes are tender and easily pierced with a fork, about 15-20 minutes.

    Preheat the Oven: While the potatoes are boiling, preheat your oven to 425°F (220°C).

      Drain and Smash: Once cooked, drain the potatoes and garlic. Spread them out on a baking sheet lined with parchment paper. Using a large fork or potato masher, gently smash each potato until it’s flattened but still in one piece.

        Prepare the Herb Infusion: In a small bowl, combine the olive oil, chopped rosemary, thyme, sea salt, black pepper, and lemon zest. Mix well.

          Drizzle and Bake: Drizzle the herb-infused oil over the smashed potatoes, ensuring they are well coated. Use a brush or the back of a spoon to spread the mixture evenly over the potatoes.

            Roast Until Golden: Place the baking sheet in the preheated oven and roast the potatoes for 20-25 minutes, or until they are golden brown and crispy on the edges.

              Garnish and Serve: Remove from the oven and sprinkle freshly chopped parsley over the top. For an extra touch, add shaved Parmesan cheese if desired. Serve warm and enjoy the deliciously garlicky, herby flavor!
