Spicy Grilled Chicken Salad Wraps

2 large boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon cayenne pepper (adjust according to heat preference)

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup romaine lettuce, chopped

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, thinly sliced

1 avocado, sliced

4 whole wheat tortillas or wraps

1/2 cup Greek yogurt (for dressing)

2 tablespoons lime juice

1 teaspoon honey (optional)

Fresh cilantro, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, smoked paprika, cayenne pepper, garlic powder, salt, and black pepper. Add the chicken breasts and coat well. Allow to marinate for at least 30 minutes, or up to 2 hours for better flavor.

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Place the marinated chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for 5 minutes before slicing.

      Prepare the Salad: In a large bowl, combine chopped romaine lettuce, cherry tomatoes, cucumber, and red onion. Toss gently to combine.

        Create the Dressing: In a small bowl, whisk together Greek yogurt, lime juice, and honey (if using) until smooth. Adjust seasoning with salt and pepper to taste.

          Assemble the Wraps: Lay out the tortillas. Spread a layer of the Greek yogurt dressing over each tortilla. Add a generous amount of the salad mixture, then top with sliced avocado and sliced grilled chicken.

            Wrap and Serve: Fold in the sides of the tortilla and roll it up tightly from the bottom to the top. Cut in half, if desired, and garnish with fresh cilantro.
