Ingredients

2 tablespoons olive oil

1 medium onion, diced

4 cloves garlic, minced

2 cups fresh Hatch green chiles, roasted, peeled, and diced (or use canned if necessary)

1 can (28 oz) crushed tomatoes

2 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon sugar

Salt and pepper to taste

½ cup heavy cream (optional for creaminess)

Fresh cilantro, chopped for garnish

Lime wedges for serving

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until soft and translucent. Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Add Chiles: Stir in the diced Hatch chiles and cook for another 3-4 minutes, allowing the flavors to meld together.

Add Tomatoes and Spices: Pour in the crushed tomatoes and vegetable broth. Add ground cumin, smoked paprika, sugar, salt, and pepper. Stir well to combine.

Simmer: Bring the mixture to a gentle boil, then reduce the heat and simmer uncovered for about 20-25 minutes to allow the flavors to develop.

Blend (Optional): For a smoother soup, use an immersion blender to purée the soup until desired consistency is reached. If you prefer a chunkier texture, you can skip this step.

Add Cream (Optional): If using, stir in the heavy cream and heat through for an additional 5 minutes. Taste and adjust seasoning if necessary.

Serve: Ladle the soup into bowls and garnish with fresh cilantro. Serve with lime wedges on the side for an extra zest.
