Ingredients

1.5 lbs sweet potatoes, peeled and cubed

1 lb Italian sausage (mild or spicy, depending on preference)

1/4 cup pure maple syrup

2 tbsp olive oil

1 tsp smoked paprika

1/2 tsp cinnamon

Salt and black pepper, to taste

3 tbsp apple cider vinegar

1 red onion, cut into wedges

2 cups Brussels sprouts, halved

4 cloves garlic, minced

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare Sweet Potatoes: In a large bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, cinnamon, salt, and black pepper until well-coated. Spread them evenly on a large baking sheet.

Add Sausages: In the same bowl, add the Italian sausage. You can either leave them whole or cut them into chunks, depending on your preference. Toss to combine with the sweet potatoes.

Mix the Maple Glaze: In a small bowl, whisk together the maple syrup and apple cider vinegar until well combined. Drizzle this mixture over the sweet potatoes and sausage on the baking sheet.

Add Vegetables: Scatter the red onion wedges, Brussels sprouts, and minced garlic over the sausage and sweet potatoes. Toss everything lightly to ensure an even coating of the maple glaze.

Roast the Bake: Place the baking sheet in the preheated oven and roast everything for about 35-40 minutes, stirring halfway through. Bake until the sweet potatoes are tender and the sausages are fully cooked with a slight caramelized edge.

Garnish and Serve: Once cooked, remove the sheet from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving warm.

Enjoy: Serve hot as a hearty dinner or a filling brunch dish, and dive into the delicious sweetness of maple-sticky sausages paired with tender sweet potatoes!
