Ingredients

1.5 lbs boneless, skinless chicken thighs, cubed

1/4 cup bourbon whiskey

1/2 cup soy sauce

1/4 cup brown sugar

1/4 cup honey

2 cloves garlic, minced

1 tablespoon freshly grated ginger

1 tablespoon cornstarch

2 tablespoons water

2 tablespoons vegetable oil

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Marinate the Chicken: In a mixing bowl, combine the bourbon, soy sauce, brown sugar, honey, minced garlic, grated ginger, black pepper, and red pepper flakes (if using). Stir until mixed well. Add the cubed chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Sear the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade for later). Once the oil is hot, add the chicken pieces in a single layer. Sear for about 5-7 minutes, turning occasionally, until they are browned on all sides but not fully cooked. Remove the chicken from the skillet and set aside.

Prepare the Sauce: In the same skillet, pour in the reserved marinade and bring it to a simmer. Reduce the heat and let it simmer for about 5 minutes. In a small bowl, whisk together the cornstarch and water until smooth. Slowly stir this mixture into the simmering marinade to thicken the sauce.

Combine Chicken and Sauce: Return the seared chicken to the skillet, coating it well in the thickened sauce. Cook the chicken in the sauce for an additional 5-10 minutes, or until the chicken is cooked through and the sauce is sticky and glossy, stirring occasionally.

Serve: Once the chicken is fully cooked, remove from heat. Serve the Sticky Sweet Bourbon Chicken over steamed rice or quinoa. Garnish with chopped green onions and sesame seeds for a touch of flavor and color.
