1 pound fresh strawberries, hulled and sliced

2 tablespoons granulated sugar (for strawberries)

2 cups heavy whipping cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 package of vanilla wafers (about 11 ounces)

Fresh mint leaves (for garnish)

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries with granulated sugar. Stir gently and let them sit for about 30 minutes to release their juices. This will enhance their sweetness.

    Whip the Cream: In a large mixing bowl, pour in the heavy whipping cream. Add the powdered sugar and vanilla extract. Using an electric mixer, whip on medium to high speed until stiff peaks form. This will take about 3-5 minutes. Be careful not to overwhip!

      Assemble the Cake: In a 9x13 inch baking dish, start with a layer of vanilla wafers. Slightly overlap them as needed to cover the bottom of the dish.

        Layer with Cream and Strawberries: Spread a layer of the whipped cream over the vanilla wafers, followed by a layer of the macerated strawberries (with juices). Repeat this process, adding another layer of wafers, cream, and strawberries. Depending on your dish's height, you can usually make about 3 layers.

          Finish with Cream: Top the final layer with the remaining whipped cream, smoothing it out evenly. You can also reserve a few strawberries to place on top for decoration.

            Chill the Cake: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight. This helps the flavors meld and the wafers to soften, creating a cake-like texture.

              Serve: Once it's chilled, remove the icebox cake from the fridge. Cut into squares and garnish with fresh mint leaves for a pop of color and freshness!
