Stuffed Bell Peppers with Brown Rice

4 large bell peppers (any color)

1 cup brown rice, uncooked

1 can (15 oz) black beans, rinsed and drained

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup corn kernels (frozen or fresh)

1 can (14 oz) diced tomatoes, with juices

1 tsp ground cumin

1 tsp smoked paprika

½ tsp chili powder

Salt and pepper, to taste

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro or parsley for garnish

Olive oil, for cooking

Instructions
 

Prepare the rice: Rinse the brown rice under cold water. In a medium saucepan, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes or until water is absorbed. Remove from heat and fluff with a fork.

    Prep the peppers: While the rice is cooking, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly coat them with olive oil and place them cut-side up in a baking dish.

      Cook the filling: In a large skillet over medium heat, add a drizzle of olive oil. Sauté the chopped onion for about 5 minutes until translucent. Add minced garlic and cook for another minute until fragrant. Stir in the black beans, corn, diced tomatoes (with juices), cumin, smoked paprika, chili powder, salt, and pepper. Cook for 5-7 minutes until heated through.

        Mix with rice: Once the rice is ready, stir it into the skillet with the bean mixture. Adjust seasoning as necessary.

          Stuff the peppers: Fill each bell pepper with the brown rice and bean mixture, packing it down gently. Top each stuffed pepper with a generous amount of shredded cheese.

            Bake the peppers: Cover the baking dish with foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly golden.

              Serve: Remove from the oven and let cool for a few minutes. Garnish with chopped cilantro or parsley before serving.
