1 cup rolled oats

1/2 cup finely shredded carrots (about 1 medium carrot)

1/2 cup almond butter (or any nut/seed butter of choice)

1/4 cup honey or maple syrup (for a vegan option)

1/4 cup unsweetened coconut flakes

1/4 cup chopped walnuts or pecans

1 tsp vanilla extract

1 tsp ground cinnamon

1/4 tsp ground nutmeg

Pinch of salt

Optional: 1/4 cup raisins or dried cranberries

In a large mixing bowl, combine the rolled oats, finely shredded carrots, almond butter, honey (or maple syrup), and vanilla extract. Stir until well combined.

    Add the coconut flakes, chopped walnuts or pecans, ground cinnamon, ground nutmeg, and salt to the mixture. If using, fold in the raisins or dried cranberries.

      Mix all the ingredients thoroughly until a sticky dough forms. If the mixture seems too dry, add a little extra nut butter or a splash of water until it holds together well.

        Once the dough is ready, cover the bowl and refrigerate it for about 30 minutes. This will help the mixture firm up and make it easier to roll into bites.

          After chilling, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into bite-sized balls. Place the energy bites on a baking sheet lined with parchment paper.

            Once all the bites are rolled, you can choose to roll them in additional coconut flakes or crushed nuts for extra texture and flavor.

              Refrigerate the energy bites for another 30 minutes to set. Store in an airtight container in the refrigerator for up to a week, or freeze them for longer storage.
