4 cups fresh sweet corn (or 2 cans of sweet corn, drained)

1 cup shredded sharp cheddar cheese

1 cup milk

3 large eggs

½ cup all-purpose flour

1 tablespoon baking powder

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

½ cup chopped green onions (optional)

1 cup crushed butter crackers (like Ritz) for topping

2 tablespoons unsalted butter, melted

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C).

      Prepare the Corn:

        If using fresh corn, cut the kernels off the cob using a sharp knife. If using canned corn, ensure it is drained and set aside.

          Mix Wet Ingredients:

            In a large mixing bowl, whisk together the eggs and milk until well combined.

              Combine Dry Ingredients:

                In another bowl, combine the flour, baking powder, garlic powder, onion powder, salt, and black pepper. Mix well until there are no lumps.

                  Mix It All Together:

                    Add the dry ingredient mixture to the wet ingredients, stirring until just combined. Fold in the sweet corn, green onions (if using), and shredded cheddar cheese until evenly mixed.

                      Prepare the Casserole Dish:

                        Grease a 9x13 inch casserole dish with non-stick cooking spray or butter. Pour the casserole mixture into the prepared dish, spreading it evenly.

                          Add Topping:

                            In a small bowl, mix the crushed crackers with melted butter until well coated. Sprinkle the buttery cracker mixture evenly over the top of the casserole.

                              Bake:
