1 lb Brussels sprouts, trimmed and halved

3 tablespoons olive oil

1/4 cup pure maple syrup

2 tablespoons balsamic vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

1/2 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional)

1/4 cup chopped pecans or walnuts (for toppings)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Brussels Sprouts: In a large bowl, combine the halved Brussels sprouts with olive oil, salt, pepper, garlic powder, and red pepper flakes (if using). Toss until well-coated.

      Roast the Brussels Sprouts: Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes or until they are golden brown and tender, stirring halfway through to ensure even cooking.

        Make the Maple Glaze: While the Brussels sprouts are roasting, whisk together the maple syrup, balsamic vinegar, and Dijon mustard in a small bowl until well combined.

          Glaze the Brussels Sprouts: Once the Brussels sprouts are almost done roasting, remove them from the oven. Drizzle the maple glaze over the top and toss gently to coat. Return to the oven for an additional 5-10 minutes, allowing the glaze to caramelize slightly.

            Serve: Remove the Brussels sprouts from the oven, transfer to a serving dish, and sprinkle with chopped pecans or walnuts and fresh parsley for garnish. Serve warm.
