2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 can (14 oz) diced tomatoes (with juices)

1 cup vegetable broth

1 medium onion, chopped

2 cloves garlic, minced

1 green bell pepper, chopped

1 tablespoon olive oil

1 tablespoon chili powder

2 teaspoons ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper, to taste

1 cup corn (fresh, frozen, or canned)

Fresh cilantro, for garnish

Lime wedges, for serving

Optional toppings: avocado, sour cream, shredded cheese

Instructions
 

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing for about 5 minutes until softened. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.

    Add Spices: Stir in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for another minute, allowing the spices to become fragrant.

      Incorporate Sweet Potatoes: Add the diced sweet potatoes to the pot, stirring well to coat them with the spice mixture.
