Ingredients

2 medium sweet potatoes, peeled and diced

2 ripe peaches, pitted and chopped

1 small red onion, diced

1 bell pepper (red or yellow), diced

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cinnamon

Salt and pepper to taste

2 cloves garlic, minced

4 large eggs (optional)

Fresh basil or cilantro for garnish

Crumbled feta cheese (optional)

Instructions

Prepare the Sweet Potatoes: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced sweet potatoes, and season with salt, pepper, smoked paprika, and ground cinnamon. Sauté for about 10-12 minutes or until the sweet potatoes are tender and slightly caramelized. Stir occasionally to ensure even cooking.

Add Aromatics: Once the sweet potatoes are cooked, add the diced red onion and bell pepper to the skillet. Cook for an additional 5-7 minutes, stirring occasionally, until the veggies have softened and the onion is translucent.

Incorporate the Peaches: Gently fold in the chopped peaches and minced garlic, cooking for about 2-3 more minutes. The peaches should become slightly softened, releasing some of their juices, which will blend beautifully with the sweet potatoes.

Optional Egg Addition: If you’d like to add eggs, create small wells in the hash mixture (about 4) and crack an egg into each well. Cover the skillet with a lid and cook for about 5-7 minutes, or until the eggs are cooked to your desired doneness.

Serve and Garnish: Once everything is cooked, remove the skillet from heat. Top the hash with fresh basil or cilantro and sprinkle with crumbled feta cheese if desired. Serve hot and enjoy the delightful combination of sweet and savory flavors!
