Sweet Potato Tater Tots with Dip

Prep the Sweet Potatoes: Start by peeling the sweet potatoes and cutting them into small chunks. Place the chunks in a pot of salted water and bring to a boil. Cook for about 15-20 minutes or until fork-tender.

    Mash and Season: Drain the sweet potatoes and let them cool slightly. Once cool, mash them in a large mixing bowl until smooth.

      Combine Ingredients: To the mashed sweet potatoes, add breadcrumbs, Parmesan cheese (if using), egg, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined. The mixture should be moldable but not too sticky.

        Form the Tater Tots: Using your hands, form small cylindrical shapes with the sweet potato mixture, approximately 1 inch in length. Place them on a lined baking sheet.

          Fry or Bake:

            - For Frying: Heat vegetable oil in a deep skillet over medium heat. Carefully add Tater Tots in batches, frying until golden brown and crispy on all sides, about 3-4 minutes. Drain on paper towels.
