Teriyaki Salmon with Stir-Fried Veggies

2 (6 oz) salmon fillets, skin-on

1/4 cup teriyaki sauce

1 tablespoon olive oil

1 cup broccoli florets

1 red bell pepper, sliced

1 carrot, julienned

1 cup snap peas

3 cloves garlic, minced

1 inch ginger, grated

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

Cooked rice (for serving, optional)

Instructions
 

Marinate the Salmon: In a small bowl, combine the teriyaki sauce and 1 tablespoon of olive oil. Place the salmon fillets in a shallow dish and pour the marinade over them. Let it marinate for at least 15 minutes while you prepare the veggies.

    Prepare the Veggies: In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

      Stir-Fry the Vegetables: Add the broccoli florets, sliced bell pepper, julienned carrot, and snap peas to the skillet. Stir-fry for 4-5 minutes, or until the vegetables are vibrant and just tender. Season with salt and pepper to taste. Remove the veggies from the skillet and set aside.

        Cook the Salmon: In the same skillet, increase the heat to high. Remove the salmon from the marinade, allowing the excess to drip off, and place them skin-side down in the skillet. Cook for about 4-5 minutes without moving them, allowing a golden crust to form.

          Baste the Salmon: Carefully flip the salmon fillets and pour the remaining teriyaki marinade into the skillet. Cook for another 3-4 minutes or until the salmon is cooked through and flakes easily with a fork.

            Combine and Serve: Once the salmon is done, return the stir-fried vegetables to the skillet to heat through for about a minute. Serve the teriyaki salmon on a plate, topped with the stir-fried veggies, garnished with sliced green onions and sesame seeds. Serve alongside warm cooked rice if desired.
