Tex-Mex Chicken Pasta Casserole

Ingredients
  

2 cups uncooked pasta (penne or rotini work best)

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

1 teaspoon taco seasoning

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes, undrained

1 cup corn (frozen or canned)

1 cup salsa (mild, medium, or spicy based on preference)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

Salt and pepper to taste

Fresh cilantro for garnish (optional)

1 teaspoon lime juice

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

      Sauté the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken. Season with taco seasoning, salt, and pepper. Cook for 5-7 minutes until browned and cooked through. Remove from skillet and set aside.

        Cook the Vegetables: In the same skillet, add chopped onion, garlic, and bell pepper. Sauté for about 3-4 minutes until the vegetables are soft and fragrant.

          Combine Ingredients: In a large mixing bowl, combine the cooked pasta, sautéed chicken, black beans, diced tomatoes (with juice), corn, salsa, and half of the shredded cheese. Stir until everything is well mixed.

            Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread evenly.

              Add Cheese Topping: Sprinkle the remaining cheese over the top of the pasta mixture.

                Bake: Cover the dish with aluminum foil and place it in the preheated oven. Bake for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.

                  Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Drizzle lime juice over the top and garnish with fresh cilantro if desired. Serve hot and enjoy!
