Tomato Basil Chicken Skewers

Ingredients
  

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup cherry tomatoes, halved

1 cup fresh basil leaves

3 cloves garlic, minced

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Prepare Marinade: In a medium bowl, whisk together olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper.

    Marinate Chicken: Add the cubed chicken to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).

      Assemble Skewers: Once marinated, take the chicken out of the fridge. Thread the chicken cubes onto the skewers, alternating with cherry tomatoes and fresh basil leaves. Aim for about 3-4 pieces of chicken, 2 tomatoes, and 1 basil leaf per skewer.

        Preheat Grill: Preheat your grill to medium-high heat. If using a grill pan on the stovetop, heat it over medium-high heat, adding a splash of olive oil to prevent sticking.

          Grill Skewers: Place the assembled skewers on the grill. Cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F). The tomatoes should be slightly blistered and softened.

            Serve: Remove the skewers from the grill and let them rest for a few minutes. Garnish with additional fresh basil if desired, and serve hot with a side of rice or a fresh salad.
