300g (10.5 oz) pasta (penne or fusilli work well)

200g (7 oz) feta cheese, crumbled

500g (17.6 oz) cherry tomatoes, halved

1 medium onion, diced

3 cloves garlic, minced

3 cups fresh spinach (optional, for added nutrition)

1/2 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp dried oregano

1 tsp dried basil

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 200°C (400°F).

    Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Aromatics: In a large oven-safe skillet or baking dish, heat the olive oil over medium heat. Add the diced onion and cook until translucent (about 5 minutes). Stir in the minced garlic and cook for an additional 1-2 minutes or until fragrant.

        Combine Ingredients: Add the cherry tomatoes, dried oregano, dried basil, salt, and pepper to the skillet. Cook for another 5 minutes until the tomatoes start to soften.

          Mix in Spinach: If using, add the fresh spinach to the mixture and stir until wilted.

            Combine with Pasta: In the same skillet, add the cooked pasta and crumbled feta cheese. Gently toss everything together until well combined.
