Tuna Lettuce Wraps with Watermelon Glaze

1 can (5 oz) of solid white tuna, drained

½ cup Greek yogurt

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 stalk celery, finely chopped

¼ red onion, finely chopped

1 tablespoon capers, rinsed and chopped

Salt and pepper to taste

1 large head of butter or iceberg lettuce, leaves separated

1 cup ripe watermelon, cubed

1 tablespoon honey

1 teaspoon fresh lime juice

Fresh cilantro, chopped (for garnish)

Optional: Sliced radishes and cucumber for serving

Instructions
 

Prepare the Watermelon Glaze:

    - In a blender, puree the cubed watermelon until smooth. Strain the puree using a fine mesh sieve into a small saucepan, discarding the pulp.
