Tuna Tacos with Watermelon Slaw

1 lb sushi-grade tuna, diced

2 tbsp soy sauce

1 tbsp lime juice

8 small corn tortillas

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

For the Watermelon Slaw:

2 cups watermelon, finely diced

1 cup red cabbage, thinly sliced

1 cup jicama, julienned

1/4 cup red onion, thinly sliced

2 tbsp apple cider vinegar

1 tbsp honey

Salt and pepper, to taste

Prepare the Watermelon Slaw:

    - In a large mixing bowl, combine the diced watermelon, red cabbage, jicama, and red onion.

      - In a small bowl, whisk together apple cider vinegar, honey, salt, and pepper.

        - Pour the dressing over the slaw mixture and toss gently until everything is well coated. Set aside to allow the flavors to meld.

          Marinate the Tuna:

            - In a medium bowl, combine the diced tuna, soy sauce, sesame oil, lime juice, and sriracha (if using).

              - Gently toss to coat the tuna evenly, and let it marinate for about 10 minutes.
