Turkey Skewers with Lemon Salsa

For the Turkey Skewers:

1.5 lbs boneless, skinless turkey breast, cut into 1-inch cubes

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

Salt and pepper, to taste

1 teaspoon lemon zest

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh parsley (for garnish)

For the Lemon Salsa:

1 cup cherry tomatoes, quartered

1/2 cucumber, diced

1/4 red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

2 tablespoons fresh lime juice

Salt and pepper, to taste

Extra lemon wedges (for serving)

Instructions
 

Marinate the Turkey:

    In a large bowl, combine olive oil, minced garlic, smoked paprika, ground cumin, dried oregano, salt, pepper, lemon zest, and lemon juice. Add the turkey cubes and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes to 2 hours for maximum flavor.

      Prepare the Lemon Salsa:

        In a mixing bowl, combine cherry tomatoes, cucumber, red onion, avocado, and fresh cilantro. Drizzle with olive oil and lime juice, then season with salt and pepper. Gently toss to combine and set aside for the flavors to meld while you prepare the skewers.

          Preheat the Grill:

            Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.

              Assemble the Skewers:

                Thread the marinated turkey cubes onto the skewers, leaving a little space between each piece for even cooking.

                  Grill the Skewers:

                    Place the turkey skewers on the hot grill. Cook for about 10-12 minutes, turning occasionally, until the turkey is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
