4 large flour tortillas (spinach or whole wheat for extra flavor)

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1 cup baby spinach, chopped

1/2 cup bell peppers, finely diced (mixed colors)

1/2 cup cucumber, finely diced

1/2 cup shredded carrots

1/4 cup green onions, chopped

1 tsp garlic powder

1 tsp dried oregano

Salt and pepper to taste

Prepare the Cream Cheese Spread: In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, garlic powder, dried oregano, and a pinch of salt and pepper. Mix until smooth and well combined.

    Layer the Ingredients: Lay out one tortilla on a clean surface. Spread an even layer of the cream cheese mixture over the entire tortilla, making sure to reach the edges.

      Add the Veggies: Evenly sprinkle chopped spinach, diced bell peppers, diced cucumber, shredded carrots, and chopped green onions on top of the cream cheese layer.

        Roll It Up: Starting from one end, carefully roll the tortilla tightly into a log shape. Try to keep it even and snug without squeezing too hard.

          Slice the Pinwheels: Once rolled, slice the tortilla log into 1-inch thick pinwheels using a sharp knife. You should get about 10-12 pinwheels from each tortilla.
