1 cup watermelon, diced (seedless)

2 slices of whole-grain or sourdough bread

1 tablespoon olive oil

1 tablespoon lime juice

1/4 teaspoon sea salt

1/4 teaspoon crushed red pepper flakes (optional)

Fresh mint leaves for garnish

Feta cheese, crumbled (optional)

Instructions
