4 cups of ripe watermelon, diced into 1-inch cubes

1 large cucumber, diced (preferably seedless)

1 cup of feta cheese, crumbled

1/4 cup of red onion, finely chopped

1/4 cup of fresh mint leaves, chopped

1/4 cup of olive oil

2 tablespoons of balsamic vinegar

Salt and pepper to taste

Optional: Juice of 1 lime for extra zing
