2 cups fresh corn kernels (or 1 can, drained)

1 can (15 oz) black beans, drained and rinsed

1 medium red bell pepper, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 avocado, diced

¼ cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon ground cumin

½ teaspoon chili powder

Salt and pepper to taste

Instructions
 

Prep the Ingredients: If using fresh corn, blanch the corn kernels in boiling water for 3-4 minutes, then drain and cool. If using canned corn, skip this step.

    Mix the Base: In a large mixing bowl, combine the corn, black beans, diced red bell pepper, red onion, cherry tomatoes, and diced avocado.

      Make the Dressing: In a separate small bowl, whisk together lime juice, olive oil, ground cumin, chili powder, salt, and pepper until well blended.

        Combine: Pour the dressing over the vegetable mixture and toss gently until everything is evenly coated.

          Add Cilantro: Fold in the fresh cilantro, giving the salad one last gentle toss to incorporate.

            Taste & Adjust: Sample the salad and adjust seasoning with additional salt, pepper, or lime juice if desired.
