1 cup quinoa, rinsed

2 cups vegetable broth or water

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper (any color), diced

1 cup corn (fresh or frozen)

1/2 red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/4 cup feta cheese, crumbled (optional for a vegan option)

Zest and juice of 1 large lemon

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

Salt and pepper, to taste

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.

    Prepare the Veggies: While the quinoa cooks, chop the cherry tomatoes, cucumber, bell pepper, and red onion. If using fresh corn, cut it off the cob.

      Mix Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, lemon zest, lemon juice, garlic powder, salt, and pepper. Adjust the seasoning as needed.

        Combine Ingredients: In a large bowl, combine the cooked quinoa, chopped vegetables (cherry tomatoes, cucumber, bell pepper, corn, and red onion), parsley, and basil. Drizzle the dressing over the top and toss to combine.

          Add Feta & Serve: If using, sprinkle the crumbled feta cheese over the salad and give it a gentle stir. Taste and adjust seasoning if necessary.

            Chill (Optional): You can serve the bowl immediately or let it chill in the refrigerator for 30 minutes to enhance the flavors. Serve cold or at room temperature.
