1 ½ cups all-purpose flour

½ teaspoon salt

1 tablespoon sugar

½ cup unsalted butter, cold and cubed

4-5 tablespoons ice water

3 ripe limes (zest and juice)

¼ cup granulated sugar (adjust based on lime tartness)

2 tablespoons cornstarch

1 teaspoon vanilla extract

Pinch of salt

1 tablespoon butter, cut into small pieces (for dotting)

For the Topping:

1 egg (for egg wash)

Raw sugar for sprinkling

Fresh mint leaves for garnish (optional)

Instructions
 

Make the Dough:

    - In a mixing bowl, combine the flour, salt, and sugar. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

      - Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a flat disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

        Prepare the Filling:

          - In another bowl, mix the lime zest, lime juice, granulated sugar, cornstarch, vanilla extract, and a pinch of salt until well combined. Set aside.

            Preheat the Oven:

              - Preheat your oven to 375°F (190°C).

                Roll Out the Dough:

                  - On a lightly floured surface, roll out the chilled dough into a rough circle, about 12 inches in diameter. Transfer to a parchment-lined baking sheet.

                    Assemble the Galette:
