2 ripe avocados

1 can (5 oz) of tuna, drained (preferably in olive oil for added flavor)

1/4 cup plain Greek yogurt (or mayonnaise for a creamier option)

1 tablespoon Dijon mustard

1 tablespoon fresh lime juice

1/4 cup diced red bell pepper

1/4 cup diced cucumber

1/4 cup diced red onion

1 tablespoon capers, rinsed and chopped

2 tablespoons chopped fresh cilantro (or parsley)

Salt and pepper, to taste

Lime wedges, for garnish

Instructions
 

Prepare the Avocados: Slice the avocados in half lengthwise and remove the pit. Gently scoop out a small amount of the flesh (about 1-2 tablespoons) from each half to make room for the filling. Set the scooped avocado aside in a mixing bowl.

    Make the Tuna Filling: In the same mixing bowl with the reserved avocado, add the drained tuna, Greek yogurt (or mayonnaise), Dijon mustard, lime juice, diced red bell pepper, diced cucumber, diced red onion, chopped capers, and cilantro. Season with salt and pepper to taste.

      Mix It Up: Gently stir all the ingredients together until well combined. Take care not to mash the tuna too much - you want a chunky texture.

        Stuff the Avocados: Spoon the zesty tuna mixture generously into each avocado half, packing it lightly.

          Garnish and Serve: Serve the stuffed avocados immediately, garnished with additional cilantro if desired and lime wedges on the side for an extra burst of flavor.
