Zucchini Cheddar Biscuits

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup grated zucchini (about 1 medium zucchini, excess moisture squeezed out)

1 cup shredded sharp cheddar cheese

1/2 cup unsalted butter, cold and cubed

3/4 cup milk (or buttermilk)

1 tablespoon fresh chives, chopped (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, pepper, garlic powder, and onion powder until well combined.

      Incorporate Butter: Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to blend the butter into the flour until the mixture resembles coarse crumbs.

        Add Zucchini and Cheese: Fold in the grated zucchini and shredded cheddar cheese until evenly distributed.

          Pour in Milk: Gradually add the milk (or buttermilk), stirring gently until just combined. Avoid overmixing; it’s okay if the dough is a bit shaggy.

            Form the Biscuits: Turn the dough out onto a lightly floured surface. Gently knead the dough 2-3 times to bring it together. Pat it into a 1-inch thick rectangle. Use a biscuit cutter or a glass to cut out biscuits and place them on the prepared baking sheet.

              Bake: Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.

                Cool and Serve: Remove the biscuits from the oven and let them cool on the baking sheet for a couple of minutes before transferring to a wire rack. Serve warm, perhaps with a bit of butter or your favorite dip!
