2 medium zucchinis, sliced into half-moons

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

1 bell pepper (any color), diced

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon paprika

½ teaspoon Italian seasoning

¼ teaspoon red pepper flakes (optional for spice)

Salt and pepper, to taste

2 tablespoons olive oil

¼ cup chicken broth (low-sodium)

¼ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Prepare the Chicken: Season the chicken pieces with paprika, Italian seasoning, red pepper flakes, salt, and pepper. Mix well to ensure the chicken is coated.

    Heat the Skillet: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the seasoned chicken. Cook for about 5-7 minutes, stirring occasionally, until chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
