Zucchini Corn Chowder with Thyme

2 medium zucchinis, diced

2 cups fresh or frozen corn kernels

1 medium onion, chopped

2 cloves garlic, minced

3 cups vegetable broth

1 cup heavy cream (or coconut milk for a vegan option)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 tablespoons olive oil

Salt and pepper to taste

Optional: Croutons or fresh parsley for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Then, stir in the minced garlic and sauté for another minute until fragrant.

    Add Zucchini and Corn: Incorporate the diced zucchini and corn kernels into the pot, stirring well. Cook for an additional 3-4 minutes until the zucchini begins to soften.

      Add Broth and Thyme: Pour in the vegetable broth and add the fresh thyme. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook uncovered for about 15-20 minutes, allowing the flavors to meld.

        Blend for Creaminess: Using an immersion blender, blend the chowder until smooth. If you prefer some chunks for texture, blend only half of the mixture. Alternatively, you can carefully transfer half of the chowder to a blender, blend until smooth, and return it to the pot.

          Finish with Cream: Stir in the heavy cream (or coconut milk) and bring the chowder back to a gentle simmer. Season with salt and pepper to taste. Allow it to simmer for another 5 minutes for the chowder to thicken slightly.
