2 medium zucchinis, grated

1 teaspoon salt

1 cup feta cheese, crumbled

1/2 cup all-purpose flour (can substitute with gluten-free flour)

1/4 cup grated Parmesan cheese

2 large eggs

2 green onions, finely chopped

1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

3 tablespoons olive oil (for frying)

Prepare the Zucchini: In a mixing bowl, combine the grated zucchini and salt. Let it sit for about 15 minutes to draw out excess moisture. After 15 minutes, use a clean dish towel to squeeze out as much liquid as possible.

    Mix the Ingredients: In a large mixing bowl, combine the drained zucchini, crumbled feta, all-purpose flour, grated Parmesan, eggs, green onions, dill, black pepper, and garlic powder. Stir well until all ingredients are evenly mixed.

      Form the Cakes: Using your hands, shape the mixture into patties about 2-3 inches in diameter and about 1-inch thick. You should have around 8-10 cakes, depending on the size.

        Heat the Oil: In a large skillet, heat olive oil over medium heat.

          Fry the Cakes: Once the oil is hot, add the zucchini cakes in batches (do not overcrowd the pan). Cook for about 3-4 minutes on each side, or until golden brown and crispy. Add more oil to the pan as needed between batches.

            Drain: Once cooked, transfer the cakes to a paper towel-lined plate to absorb any excess oil.
