Zucchini Lasagna Roll-Ups

3 medium zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (store-bought or homemade)

2 cloves garlic, minced

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Fresh basil leaves, for garnish

Salt and pepper, to taste

Olive oil, for drizzling

Instructions
 

Preheat your oven to 375°F (190°C).

    Using a mandoline or a sharp knife, slice the zucchinis lengthwise into 1/4-inch thick strips. You should get about 12 slices.

      Lay the zucchini slices on a baking sheet lined with paper towels. Sprinkle with a little salt and let them sit for about 15 minutes to draw out excess moisture. Pat dry with more paper towels.

        In a mixing bowl, combine the ricotta cheese, 1/2 cup of mozzarella cheese, grated Parmesan cheese, egg, minced garlic, Italian seasoning, and red pepper flakes (if using). Season with salt and pepper to taste and mix until smooth.

          Spread 1/2 cup of marinara sauce at the bottom of a 9x13-inch baking dish.

            Take a zucchini slice, spread about 2 tablespoons of the ricotta mix over it, roll it up tightly, and place it seam side down in the baking dish. Repeat with the remaining zucchini slices and filling.

              Once all the roll-ups are in the dish, pour the remaining marinara sauce over them, ensuring all are covered. Sprinkle the rest of the mozzarella cheese on top.

                Drizzle a bit of olive oil over the entire dish for added flavor.

                  Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

                    After 25 minutes, remove the foil and bake for another 10-15 minutes, until the cheese is bubbly and slightly golden.

                      Remove from oven and let it cool for about 5 minutes. Garnish with fresh basil leaves before serving.
