2 medium zucchinis, grated

1 cup shredded cheese (cheddar or Monterey Jack work well)

1/2 cup crumbled feta cheese

1/4 cup finely chopped red onion

1/4 cup fresh cilantro, chopped (optional)

1 tsp garlic powder

1 tsp cumin

Salt and pepper, to taste

4 large flour tortillas

2 tablespoons olive oil

Sour cream and salsa for serving (optional)

Prepare the Zucchini: Start by grating the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth, and squeeze out as much moisture as possible. This will prevent the quesadillas from becoming soggy.

    Mix the Filling: In a mixing bowl, combine the drained zucchini, shredded cheese, feta cheese, red onion, cilantro, garlic powder, cumin, salt, and pepper. Mix well until all ingredients are evenly incorporated.

      Assemble the Quesadillas: Lay a tortilla flat on a clean surface. Spoon a generous amount of the zucchini mixture onto one half of the tortilla, then fold the other half over to create a half-moon shape. Press down gently to secure the filling.

        Cook the Quesadillas: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, carefully place one quesadilla in the skillet. Cook for about 3-4 minutes on one side, or until golden and crispy, then flip and cook the other side for an additional 3-4 minutes. Repeat the process for the second quesadilla, adding more oil as needed.

          Serve: Once cooked, remove the quesadillas from the skillet and let them sit for a minute before cutting them into wedges. Serve warm with sour cream and salsa on the side for dipping.
