1 avocado, diced

1/4 cup feta cheese, crumbled (optional)

For the Dressing:

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon Dijon mustard

1 clove garlic, minced

1 tablespoon honey or maple syrup (optional for sweetness)

Salt and pepper to taste

Juice of 1 lemon

Prepare the Vegetables: If you haven't already, spiralize or thinly slice the zucchinis. Ensure all vegetables are prepped and cut as listed in the ingredients.
